- ¾ cup (6 fl oz/180 ml) water, boiling
- ½ cup (3 oz/90 g) 9-grain cereal
- 1 ¾ cups (9 oz/280 g) whole-wheat (whole meal) flour
- ½ cup (2 oz/60 g) cake (soft-wheat) flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda (bicarbonate of soda)
- 1 teaspoon salt
- 1 ½ cups (12 fl oz/375 ml) buttermilk
- 1/3 cup (4 oz/125 g) honey
- 1/3 cup (3 fl oz/80 ml) vegetable oil
- 1 egg
Nine-grain cereal usually contains cracked rye, barley, rice, corn, oats, millet, flax, soy and triticale. It is coarse and earthy and often valued for its fiber and nutrients. Look for it in health-food stores, and enjoy the crunchy texture and the taste of grain it imparts to this simple bread.
In a small bowl pour the boiling water over the cereal and stir well. Let stand for 20 minutes and then drain off any remaining water.

In a large bowl stir and toss together the whole-wheat flour, cake flour, baking powder, baking soda and salt. Set aside. In another bowl whisk together the buttermilk, honey, oil and egg until smooth. Stir in the cereal. Add to the combined dry ingredients and stir just until blended.
Spread in the prepared pan. Bake until a thin wooden skewer inserted it the center of the loaf comes out clean, 55-60 minutes. Cool in the pan for 10 minutes and then turn out onto a wire rack to cool completely.
